            In other pages of this portal we have seen that food and wine drinking has been blessed by all gods in thousands of year’s history in ...

       In this page, our task is, to teach you cooking some of the most famous ones.....


                        Moussaka [for 12 portions]


 We cut in flat leaves eggplants [1 kilo] and potatoes [1 kilo]

We fried them separately, in strong fire using vegetal oil

 After getting slightly reddish, we dry them in kitchen paper to release from oil....

 We prepare slashed beef meat, as for a Bolognese sauce, with olive oil, oregano and garlic, onions salt and pepper ....Everything adjusted in our personal taste...

We get the meat first roasted with all the ingredients, in slow fire, till they mixed

 together  and become gray...Then we add slashed tomatoes and  some water  less than in Bolognese, but enough to boil well our sauce...When it’s getting dry enough,  we take it away from heat [about 20 min cooking]

At last we need to prepare a Béchamel sauce, before we get everything in the oven

We put some butter in a boiler with slow fire and we add slowly flavor so not to get burned...Then we add a 1 ½ of milk to boil and we turn slowly –slowly, adding slashed cheese for spaghetti’s, till the whole sauce becomes harden and difficult to turn

 We take a large oven plate and we put the eggplants first, then we cover them with the meet sauce, then we put the potatoes to cover all the others and at last we use the Béchamel to cover the whole plate before we put it in a heated oven, for 10 minutes and live it another 45 min in a classic oven position and 200 C.... We let the plate to heat down and we cut 12 portions with a knife [3x4]

After 10 minutes is ready to be served......

 Exactly the same preparation but instead of potatoes and eggplants we use big spaghetti’s

especially made for this dish, but you can make it with rigatoni or any flat spaghetti’s...


                                  Skordomacarona

 

 

This is a very easy to make dish of Santorini, very healthy and very tasty!

 You boil spaghetti first and then you make a sauce with olive oil a lot of garlic salt and pepper and you add slashed tomatoes in a slow fire for few minutes just to start releasing the perfume of the garlic before you add the spaghetti and it’s ready to be served

The garlic replaces the cheese, probably a recipe   from the old times of Venetian period

 and influence...A pour people’s dish but  rich in healthy ingredients....

Another pour people, reach in healthy ingredients, dish....

You get fresh vegetables like tomatoes, red and green peppers, oregano, salt and pepper, olive oil and flavor. You make balls of the slashed ingredients after you deep them in flavor before you fried, in strong heated olive oil....


                               Spinach saganaki


 You need a small fryer, where you put some spinach slashed with some butter to fried slowly and softly, before you add feta cheese  and finally the eggs [2 for 2 portions]
